Water for technological processes

Water quality when brewing beer is of great importance. The fermentation process depends on the correct balance of ions and Ph, both of with affect the taste and stability of beer. Special attention is given to the ratio of alkalinity and calcium salts. Surplus chloride content slows down the fermentation process, high sodium content gives beer a salty-sour taste, and too many sulphates makes beer bitter.

Sometimes it is difficult to remove ions from water selectively, and so partial or full demineralisation is used along with other treatments. Ion exchange and membrane technologies are used in order to do this effectively.

Non-alcoholic drinks are manufactured using drinking-quality water, which is disinfected and has certain organic elements removed. If necessary the water is also softened. Special attention is given to organoleptic properties.
